Will PINEAPPLE Completely DISINTEGRATE a STEAK? | Guga Foods

  • Pineapple have enzymes that cut down proteins, they are called Bromelain. It is known that you can tenderize meat with this enzyme. Today I am pushing the limit to find out how much is too much. This experiment is for 4 steaks cut out of the same loin. They all have been exposed to the pineapple for 1hr, 6hrs, 16hrs and 24hrs. How much is too much?

      Pineapple juice is acidic with your pH noted being in the right ballpark. While pineapple juice is acidic, pineapple is a "alkali forming" (aka alkalyzing) food, a food that creates a more alkaline environment in the stomach. Although it might seem that citrus fruits would have an acidifying effect on the body, the citric acid they contain actually has an alkalinizing effect in the system. Note that a food's acid or alkaline forming tendency in the body has nothing to do with the actual pH of the food itself. For example, lemons are very acidic, however the end products they produce after digestion and assimilation are very alkaline so, lemons are alkaline forming in the body. Likewise, meat will test alkaline before digestion, but it leaves very acidic residue in the body so, like nearly all animal products, meat is very acid forming.

      Pineapple has a pH of 3.2 to 4. This makes it very acidic

      If you have a basic understanding of the pH scale, you can understand why those steaks turned out the way they did. 7 is considered neutral. Anything below 7 is considered acidic. Anything above 7 is considered basic. Too much on either end of the scale can do some serious damage to just about anything

                              I wished I had seen this video before I tried it. I had seen the earlier video using pineapple as a tenderizer. Left it on for one hour, washed all of the pineapple off, seasoned and bagged them to sous vide the next day. They were as horrible as Angel described. The texture was a slimy, grainy putty.

                              It would seem that once the Bromelain gets into the meat, it will keep breaking down the protein.

                                                    I loved this vid. Very informative as it’s all too easy to over marinate in everyday life. Hope you will follow this up by dialling it in with the shorter time slots of say 15, 30, 45, 60 minutes to find the absolute perfect time for pineapple tenderising.

                                                                                            I saw your last video about pineapple tenderising, and I went all-in on it. Thinking if some is good, more is better, and marinated it overnight. It was awful. The outer quarter inch was literally the consistency of what Angel called it.
