            If you have a 5 gallon bucket, you can do a quick vacuum, by filling the bucket half way with water and drop the bag with the pork belly in it, and the water pressure will push the air out. Its definitely more effective and works well.

                                                  MCLR722 kosher salt is actually a classification of salt from the Middle East that was used to remove blood from meat to make it kosher, and can be used for many non-kosher applications

                                                                                      I made bacon and eggs in Japan (was traveling for work) and let me tell you, it looks exactly like it does in Spirited Away. I think Japanese bacon is cut differently than American bacon to be less fatty and more meaty. The flavor was very different too, it was slightly saltier than American bacon and tasted more "natural". And their egg yolks really are this deep orange color and the yolk has a deeper flavor.

                                                                                      I really miss Japanese food if you can't tell.
